Hamburger & Rice Casserole
1 lb. hamburger
5 ½ c. boiling water
1 large onion, chopped
1 c. uncooked rice
1 c. peppers, chopped
1 ½ - 2 oz. envelopes chicken noodle soup mix
1 can cream chicken soup
1 stalk celery, sliced
Brown onions, celery & peppers. Boil water, rice and soup mix for
2 min. Mix with onion mixture and add hamburger. Put in baking dish &;
Bake at 350 deg for 1 ½ hrs. If it seems dry, put 1 can of heated chicken or
celery soup over top. Add grated cheese if desired. (We like it best with
soup over top just before serving.)
Chicken Casserole
1 can cream of mushroom soup
½ c slivered almonds
2 c. chicken, diced
¼ c grated cheese
2 c. cooked noodles
2 T. melted butter
1/3 c. ripe olives, sliced
½ c potato chips, crushed
Combine soup, noodles, ¼ c almonds, chicken, olives, and onion. Grease
Casserole and add mixture. Sprinkle potato chips, grated cheese and nuts
over top and bake in 400 deg. oven about 20 min.
Minute Fudge Icing
1 sq. chocolate or 2 T. cocoa
1 T. corn syrup
1 ½ c. sugar
2 T. butter
7 T. milk
pinch salt
2 T. shortening
1 t. vanilla
Mix all ingredients together, except vanilla, and bring to a full rolling boil,
stirring constantly. Boil briskly about 3 min (a little longer on humid days)
Cool to warm and add vanilla. Beat til thick enough to spread. If it becomes
too thick, add a little cream. Makes enough for 2 layer cake or a flat cake.
Chocolate Fudge
Boil together for 4 ½ min:
4 ½ c sugar
1 cube butter (or 1/3 c.)
1 can canned milk
Prepare in large bowl:
1 lb. chocolate candy bar or 1-2 pkg chocolate chips
1 pt. marshmallow cream
2 c. chopped nuts
Pour boiled mixture over bowl mixture and mix together until all is melted.
Spread in large oiled cake pan & let set 24 hrs. (Stock can be used for marshmallow
cream: 32 marshmallows are equal to 1 pt. marshmallow cream.)
Christmas Jelled Salad
1 sm. pkg. lemon Jello
¾ c. whipping cream
1 sm. can crushed pineapple
Use juice from pineapple to dissolve jello, etc. When partly set, whip. Add
Whipped cream and pineapple. Add jelled cubes and set in fridge.
Jelled Cubes
Use orange, lime or cherry jello.
Use 1 ½ c. water to each pkg. Jello. Set the day before. Pour in shallow pans separately. Cut in cubes and add to above Jello.
Sauces:
Butterscotch
¾ c. brown sugar
pinch salt
2 T. butter
¼ c. light cream of canned milk
¼ c. corn syrup
¼ t. vanilla
Combine sugar, butter, corn syrup and salt. Heat, stirring til sugar dissolves.
Cook to soft ball stage. Remove from heat and add rest of ingredients. Makes 1 c.
Orange
1 c. sugar
1 (6-oz) can orange juice concentrate
¼ c. water
Boil sugar & water together for 1 min. Remove from heat & add orange juice a
little at a time. Makes 1 ½ c.
Chocolate
½ c. sugar
1 ½ T. corn syrup
¼ c. cocoa
½ c. canned milk
2 T. water
½ t. vanilla
Mix sugar & cocoa together. Stir in water, then add corn syrup. Boil together
Til smooth & slightly thickened. Remove from heat. Stir in milk and vanilla
